Peanut Butter Cake with PB Frosting

Starting off the year with easy, cause easy is what january calls for. A simple one layer deliciously moist peanut butter cake with pb cream cheese frosting. The recipe was an accidental adaptation of my speculoos mini cake recipe when after trying 4 shops in town could not find any speculoos butter, so I thought why not just make it with peanut butter instead. And it turned out lip smacking delicious. It’s an almost one bowl, no fancy assembly required. Just mix, bake and swirl that pb frosting alll over, then lick the spoon for good measure!

Substitutions
Peanut Butter: feel free to experiment with whatever nut butter you fancy.

Buttermilk: you can make a substitute buttermilk with milk and lemon juice (or other vinegar). Combine 1/2 cup milk with 1 1/2 tsps of lemon or vinegar and let stand for 5-10mins until curdled slightly.

Peanut Butter Cake with PB Frosting

Ingredients

Scale

190g (1 1/2 cups) all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt

120g (1/2 cup) flavourless oil
225g (1 1/4 cup) dark brown sugar
2 eggs
120g (1/2 cup) buttermilk
125g (1/2 cup) peanut butter
1 tsp vanilla extract

Frosting
225g full fat cream cheese, slightly softened
115g (1/2 cup) unsalted butter, slightly softened
125g (1/2 cup) peanut butter
325375g (2 1/2 – 3 cups) powdered sugar
1/2 tsp vanilla extract

Instructions

Heat the oven to 350F. Grease and flour an 8inch cake pan.

In a large bowl mix all the dry ingredients together. In another bowl whisk all the wet ingredients together. Add the wet ingredients to the dry ingredients and fold in until just combined.
Pour the batter into the cake pan and bake for 35mins or until a toothpick into the middle comes out clean. Allow to cool for 15mins and then transfer to a cooling rack. Let cool completely before frosting.

Frosting
Beat butter, cream cheese and peanut butter with an electric whisk on medium till light and fluffy.
Add the icing sugar about half a cup at a time, mixing on low until fully mixed in. Turn up to medium high and beat till light and fluffy.

To assemble
Spread a thick layer of pb frosting all over the top of the cake swirling as you go. Enjoy!
