Everyone seems to be stuck in an endless heatwave at the moment. Well that is except for me! The heatwave in england started just as I left and the lovely hot summer I was promised in Canada hasn’t really showed it’s face yet. Typical as it seems I’m the only person who appreciates being stuck in an outside furnace! Well you know before it gets tooo hot and I then of course I will probably start complaining. But if you are stuck in a heatwave or even just have mildly hot weather then this breakfast is for you. This is overnight oats, the super easy version as that’s the way I like to do things around here. Top if with whatever fruit you want really, though I do recommend the grapefruit, mango or any other tropical fruit option to help you with that cooling down.

Overnight Oats with Tropical Fruit

Serves: 2
dairy free, gluten free*, vegan
1 cup oats
1 1/2 cups whatever milk you fancy
1/4 tsp vanilla essence
toppings (mango, grapefruit, pomegranate seeds and coconut flakes are pretty good!)

Simply put all the ingredients in a jar. Shake it up till combined. Put in the fridge overnight. In the morning top with whatever fruit you want and enjoy.
