So I realised that I haven’t done many posts with meat in yet, and it’s starting to look like I’m vegetarian, I’m really not! This is honestly one of my favourite go to easy dinners. It requires so little effort, seriously you only need to chop the fennel and orange up. So simple, yet so great. Even though I’ve put measurements in here, you barely even need them. Slice some fennel and oranges, lay in the bottom of a tray, lay the chicken on top, drizzle olive oil over everything and roast. Add some olives after, there’s really not a lot that can go wrong.

Chicken with Orange and Fennel

Serves: 4
dairy free, gluten free

4 chicken thighs
2 fennel bulbs
1/3 cup olives

sauce
4 tbsps olive oil
1 orange
2 cloves garlic

Preheat the oven to 200C.

Cut the fennel in half, then cut into thin wedges. Place on the bottom of a roasting dish.

Halve the orange, juice half of it for the sauce. Cut the other halve into small pieces and add to the fennel.

Lay chicken on top, pour the sauce over everything. Roast in oven for 30mins.

Serve with rice, cous cous or quinoa and a side salad.
